Tuna on Brown Rice Cakes with Salad

This is one of my staples as its super tasty, filling and gives you a good boost in energy! It's the perfect balance of healthy carbohydrates, protein, fats & gives you a few serves of veggies too.

Roast Vegetables with Spinach, Walnuts & Goat Cheese

This recipe is one that can you simply throw together with some chicken. You firstly roast zucchini, red capsicum, green capsicum, tomato and sweet potato then serve them on a bed of spinach leaves, add some toasted walnuts, goat cheese and drizzle with balsamic vinaigrette. It's absolutely delicious!

Vegetarian Quiche

This is actually a recipe from my dinner recipes section (makes 6 serves) and is freezer friendly! It contains eggs, pumpkin, potato, veggies and feta - it's super tasty and a serve goes really well with a basic side salad.
